Caprese Grilled Cheese

Remember the other day when I made chili at the drop of a hat, because I had family coming over that evening?

Well… I gotta say…

I got a little wild hair, and whipped up something in the kitchen, to serve along side the chili.  Yeah, a peanut butter sandwich usually accompanies the chili in our house, but with family coming, I wanted to mix it up a bit.

This was so stinkin’ easy to make, and I quote:

Jessica, this is really good… yum, is that mozzarella?

…. from my husband, who gives it to me straight.

I cut out a ton of time by buying what I could, that was already sliced.  The bread, mozzarella cheese, and the prepackaged basil.  I sliced the tomatoes, and that was it!

Butter one side of a slice of bread, and place buttered side down on pan over medium heat.  {Nothing fancy, just whichever pan you use to cook a typical grilled cheese.  I use this cast iron pan, to get the little “grill,” marks on my sandwich.  I’m sure a panini maker would work fabulous too.

Cover the bread with the sliced mozzarella, as much as you can.

Since I used roma tomatoes, I then put about 3 slices on top of the cheese.

Top with a little fresh basil…

… and butter one side of another slice of bread.  Place on sandwich, buttered side up. Caprese Grilled Cheese - An adult grilled cheese ! {Serve with Chili too} https://fantabulosity.com

When bottom side is a nice golden-brown, flip over to allow the other side to cook.

When the other side is a nice golden brown, you’re ready to eat!
Side note: If you find that the sides are a nice golden brown, but the cheese isn’t quite melted yet… turn the burner down to “low,” and let the sandwich rest for a bit, gently melting the cheese.

It’s “hubby,” and “guest,” approved… so I’ll definitely be making it again.  Possibly as soon as my stomach growls, because it will be incredibly easy to whip up for a quick bite for myself. 😉

Now the reason I didn’t put the quantities of each ingredient, is because it will depend on just how many sandwiches you want to make, and what size of bread you use!

Caprese Grilled Cheese

Ingredients

  • Sliced Italian Bread {Or any bread you prefer to use or have on hand!}
  • Sliced Mozzarella {You can slice a ball of it yourself or buy it pre-sliced like I did!}
  • Sliced Roma Tomatoes
  • Fresh Basil
  • Butter for spreading

Instructions

  1. Butter one slice of bread, and place face down on a preheated {over medium heat} pan.
  2. Next, cover the bread with slices of mozzarella cheese.
  3. Layer sliced tomatoes over the mozzarella.
  4. Add a few pieces of fresh basil on top of mozzarella.
  5. Butter one side of a second piece of bread, and place buttered side up, on top of sandwich.
  6. When bottom becomes a golden brown, flip over to brown other side.
  7. When bottom is golden brown, it's ready to serve!
  8. Note: If you find that the bread is golden brown, but the cheese is not quite melted, holding the sandwich together... let the sandwich rest over a low burner until melted.
