    Corned Beef Sliders

    These Corned beef sliders, or “Reuben sliders“, are ready in only 30 minutes! Delicious deli corned beef, sauerkraut, cheese, and a few other simple ingredients on a Hawaiian bun, are the ultimate slider that’s perfect for a party food or an easy dinner!

    I love making sliders! They are perfect as appetizers or your main dish, and they taste great at any temperature. Serve them hot but then you can totally enjoy the leftovers cold!

    If you want more beefy options, cheeseburger sliders are a classic take. Need more sauce? Try out some sloppy joe sliders, too! These rolls also make mini breakfast sandwiches for grab-and-go goodness.

    • Rolls – The sweet Hawaiian flavor pairs so nicely with the tangy filling ingredients.
    • Meat – Corned beef is a great deli favorite.
    • Cheese – Swiss is a traditional corned beef pairing, but feel free to use any tangy cheese you have on hand.
    • Sauerkraut – Make sure and drain this off so that your sliders aren’t soggy.
    • Dressing – I love a good thousand island here, but you can go in a new direction and try out some ranch.

    How to Make Mini Corned Beef Sandwiches

    Steps on how to make corned beef sliders.

    STEP 1. Slice tolls. We are going to slice the rolls in half horizontally, leaving the individual rolls connected.

    STEP 2. Begin layering. Arrange the beef slices in an even layer and top with the drained sauerkraut.

    Tip: Be careful slicing the rolls. Try and cut directly through the middle of them, and leave the tops and bottom in large slabs. This allows everything to bake up evenly without everything “sliding” out the sides.

    STEP 3. Finish assembly. Top with slices of cheese and your desired dressing.

    STEP 4. Top and bake. Add the top buns, then brush with butter and sprinkle on poppy seeds. Bake until cheese melts and buns are golden.

    Recipe Pro Tips

    • Switch it up. Use everything bagel seasoning on top instead! You can also use sesame seeds or leave them plain.
    • Wrap it up. Got leftovers? Wrap tightly in plastic wrap before adding to a bag in the freezer. This way you can easily grab a single serving at a time.

    What other fillings can I use?

    Use this recipe as a framework! Select any type of deli meat or cheese, and pair with your favorite dressing. The beauty of this recipe is that it shows you the basic assembly and cooking instructions, but you can play chef and use anything inside or on top.

    Can I use different rolls?

    Absolutely! The Hawaiian are easy to find and everyone loves the taste. They are also more likely to stay together in a slab. However, you can use any type of buns and just nestle them in next to each other. Be aware that larger buns may require more filling or a longer cook time.

    What type of pan is best for baking sliders?

    You can either place these in the center of a baking sheet or they fit beautifully in a 9×13 dish. It all depends what you have in your kitchen. Using a baking dish means no filling will leak out the sides, which is sometimes beneficial if you overstuff them or use lots of cheese.

    What to Serve with Corned Beef Sliders

    I recommend a veggie tray and fruit salad, plus of course a bag of your favorite chips! If you’re turning this into a complete meal, try some sweet potato fries in the air fryer!

    Storage

    Serve these sliders piping hot! The melted cheese is so good. You can place any leftovers in an airtight container in the fridge for up to 2 days. Enjoy them cold or reheat in the toaster oven.

    For longer storage, or to meal prep, assemble the sliders right on aluminum foil. This way you can just set it right onto a baking sheet and bake from frozen, adding a few extra minutes to thaw all the way through.

    Ingredients

    • 12 Hawaiian rolls
    • 12 slices deli corned beef about ½ pound
    • 1 cup sauerkraut lightly strained
    • ¾ cup thousand island dressing
    • 6-8 slices Swiss cheese
    • 2 tablespoons unsalted butter melted
    • poppy seeds

    Instructions
     

    • Preheat oven to 350°F.
    • Cover a rimmed baking sheet with parchment paper or aluminum foil (note: if using foil spray lightly with a non-stick spray).
    • Leaving the rolls intact, slice them in half on the horizon.
    • Starting with the bottom buns placed on the baking sheet, layer the corned beef, sauerkraut, thousand island dressing, Swiss cheese, followed by the top of the buns.
    • In a microwave safe bowl melt 2 tablespoons butter and brush over the top of the buns and sprinkle with poppy seeds.
    • Place tin foil over, loosely, and bake for 15-20 minutes. Remove the foil to brown the tops slightly, and enjoy!

    Notes

    Store leftovers for up to 2 days, and you can easily reheat the sliders the toaster oven if you have one! (Or a microwave or even reheat at a low temperature in the oven.)
