    BBQ White Queso Nachos

    BBQ White Queso Nachos: A weeknight meal that your family will love and it’s a great way to use leftover meats that you have on hand! If you have leftover taco meat, these Doritos Nachos with Ground Beef are a great choice too.

    Every once in a while, I get the urge to clean out my freezer, and experiment in the kitchen with only what I have on hand. (Does anyone else do that, or am I a little crazy?)

    The culprit is, that I’ll make a trip the grocery store, see an ingredient and think

    Ohhh! I’ll grab X, and make X this week.

    Only to get home and realize that I forgot the other ingredients that I would need to make X, so I’ll just stick, what I bought in the freezer, and save it for later.

    A few trips like that to the grocery store, and I have so many odds and ends taking up precious space in the freezer. So about once a month, I get my chef hat on, and get to work.

    BBQ Nachos with Leftover Meats

    Because I DO love cooking an oven baked roast, I did just that… and a few hours later, took the roast out, pulled it off of the bone, and coated it in BBQ sauce.

    So what does that look like for you, for a busy weeknight? Put your roast in the slow cooker before you leave for work, and when you get home, pull the meat off of the bone, and tear/cut in to little pieces. Toss with BBQ sauce, and your have the delicious protein to top your nachos with!

    Where’s the beef? 

    Now my favorite part of this recipe is that you can switch out any type of meat that you have on hand, or prefer.

    For instance, making a large batch of chicken in the crock pot, is a great way to get a quick meal on the table!

    I absolutely LOVE the idea of using these burnt ends on nachos! Could you imagine the deliciousness that comes with that!?

    Say you have a rotisserie chicken that you need to use. Rip the meat off of that baby and coat it with BBQ sauce, throw it over some chips and cheese, and chow down. But let me tell you a little more about what I put on mine, to make it incredibly delish…

    My family LOVED the bbq white queso nachos, and considering how easy they were, and I was able to use only what I had on hand… it’s now a favorite of mine for weeknights too!

    Ingredients

    • 1 block white queso Velveeta
    • 2- 3 Tablespoons milk or desired amount for preferred texture
    • 1 cup cooked beef can substitute with chicken, shrimp, or preferred meat
    • ½-1 cup BBQ sauce
    • green onion chopped
    • 1 tomato chopped
    • ½ red onion chopped

    Instructions
     

    • According to package directions, melt your white queso and milk in the microwave.
    • In a separate bowl, generously coat your cooked meat with BBQ (The more the better, in my opinion)
    • On a large platter or individual plates, place a layer of tortilla chips.
    • Pour melted white queso over the top of the chips.
    • Top with additional ingredients that you desire.
