Doritos Nachos are as good as they sound. Doubt I’ll ever make nachos using plain tortilla chips again, and I’ll definitely be putting Doritos on the nacho bars I create!
Ready in minutes, this appetizer recipe is fantastic for football season, fall weather, as a side dish for your favorite chili recipe, or just a fun easy dinner recipe like this Dorito Chicken Casserole recipe!
Recipe Highlights
- Ease: Easy to make, and great for beginners in the kitchen.
- Versatile: You can use different chips, and different toppings, and make this your own creation.
- Purpose: A great party food, late-night snack, or even a great dinner recipe that everyone can share around the table.
There’s something about using white Queso on nachos, which is why I recommend using it on these BBQ nachos too! However, a great Rotel with ground beef will always have my heart as well.

Ingredients
Feel free to be flexible with the ingredients and the ingredient amounts in this recipe. Here are some notes about some of the ingredients I’ve used but you can find the full list and instructions below in the recipe card.
- Doritos: You don’t have to use the brand name and you can use any nacho cheese-flavored chip if you like. You can also use something like a ranch-flavored chip if you prefer.
- Queso: I use a storebought queso but feel free to make your own.
- Fiesta cheese: I like to use the finely shredded cheese for these and if you can’t find the fiesta cheese, you can use cheddar or something like Colby Jack.
- Ground beef: I think ground sausage would also be incredible in this recipe. Cooked chicken or shrimp would also be delicious. Or, if you have leftover taco meat, it’s the perfect way to use it!
- Taco seasoning: if you don’t have a packet of this on hand, this chicken taco seasoning works great.
Note: You may not use the entire 1 pound of taco meat. Using the extra taco meat to make the Taco Salad with Catalina dressing or these fried tacos would be such a great idea.
How to Make Doritos Nachos
- Start by cooking your ground beef, and draining the grease if needed. Add in the taco seasoning, and mix together with the cooked beef. (I actually don’t add in water, just to keep the ground beef really seasoned but you can add water according to the package directions if needed.)
- You can use a platter, or a cookie sheet lined with parchment paper like I did if you like, and spread out the bag of Doritos on to the sheet. (Spreading them out so cheese can get on as many chips as possible.)
- Next, warm your queso and pour it over the top of the chips.
- Sprinkle on the desired amount of cooked taco meat. You can use the entire pound or must half, like I did.
- Then it’s time to add your favorite toppings:
– shredded fiesta cheese
– black olives
– diced tomatoes
– green onions
– sliced pickled jalapenos
Serve the nachos immediately and enjoy!
Storing Instructions
The unfortunate thing about making nachos like this is that if all haven’t been eaten, the chips can get soggy. However, if that’s your thing, refrigerate them within a couple of hours of sitting out and reheat in the oven.
Yes! They add even more flavor to nachos and hold their crispiness for a while when covered with cheese.
Almost any Doritos flavor is good for nachos but Nacho Cheese and Cool Ranch are great go-to’s. Although spicy flavors can be great as well.
Make sure as many chips can get covered with cheese and toppings, as possible. Also make sure to have enough cheese to go with the amount of chips. Put the toppings on the side that may not be enjoyed by everyone
You don’t. I actually prefer not to bake them but you can if you want to warm the chips slightly. Just be careful not to burn them.
