Cauliflower Potato Salad – Easy Low Carb Recipe that’s a cauliflower salad that you’ll want to make for that barbecue this summer, or even during the week for a healthy side dish recipe on a low carb or keto diet!
Cookout season is here! And no cookout is complete without hot dogs, corn on the cob, watermelon, and potato salad! However, for those of us trying to keep the carbs under control this summer, or at least save them for the cocktails and beers, the potato salad may be a dish we are tempted to bypass.
Who wants to do that though? It’s definitely easier said than done to skip this cookout classic. This cold, creamy delight, is the perfect tangy side dish to pair with a savory hot dog or hamburger, not to mention beer. So, what’s a girl to do?
Cauliflower Potato Salad
Enter the “faux tato” salad. This easy low-carb cauliflower potato salad makes one sneaky substitution. That’s right! Cauliflower instead of potatoes!
Cauliflower Vs. Potatoes
Fear not, lightly steamed cauliflower has a similar texture to boiled potatoes. It’s a beautiful alternative to the traditional version made with white potatoes so that you can watch your carbs. It’s the best of both worlds. You can slip into that swimsuit with confidence all summer and still have the traditional tastes of summer.
Or, at the very least, you can save your carbs for where they count. Like poolside brewskies and margs! (A girl’s got to have priorities right? )

Add Your Special Touch
You could also fold in onions, chopped pickles, or whatever your mom used to put in her famous potato salad. This low carb cauliflower potato salad is your oyster, or however the saying goes.
Cauliflower Potato Salad
- 8 cups chopped and washed cauliflower
- 6 hard-boiled egg yolks
- 1 cup mayo
- 2 tbsp yellow mustard
- 1 tsp apple cider vinegar
- 2 tbsp chopped chives
- paprika garnish, optional
1. Lightly steam cauliflower, no more than 4 minutes per batch. Set in the refrigerator to cool.
2. Combine egg yolks, mayo, yellow mustard, and apple cider vinegar in a bowl and mix until creamy. You can use a fork, but it may have a few lumps. For the smoothest result, use an immersion blender.
3. Pour mayo mixture over cauliflower and combine until all the cauliflower is nice and creamy. Then, lightly fold in chopped chives.
4. Place in serving bowl and garnish with paprika. Serve chilled.
Keep It Cold!
Like any salad, this baby should be served cold. So when it’s really hot outside, you definitely want to keep your cauliflower “faux tato” salad as cold as possible. If you are serving it outdoors, it might be a good idea to put your container of cauliflower “faux tato” salad on top of a larger bowl filled with ice. This will ensure your salad stays nice and cold. Let people blame too many margaritas for their stomach aches the next day, not your beloved salad.
