With just a handful of ingredients that you may already have in your pantry and fridge, chicken and gravy is an easy dinner that the whole family will love!

- 2 lbs. boneless skinless chicken thighs, cut into bite sized pieces
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon poultry seasoning
- 4 tablespoons of butter, divided
- 2 tablespoons of all purpose flour
- 1 cup chicken stock
- One 10 oz. can of condensed cream of chicken soup
- One 1 oz. packet of french onion soup mix
- 2 tablespoons of fresh parsley, chopped for garnish

Instructions
This is one of the easiest chicken and gravy recipes I’ve come across. You just need one bowl and one pan, so follow these easy how-to instructions and dinner will be on the table in no time!
- First, in a large mixing bowl, season the chicken with salt, pepper and poultry seasoning. Toss to coat the chicken evenly and set the bowl aside.
- Next, in a large cast iron pan or large frying pan, melt 2 tablespoons of butter over medium high heat. Add the chicken.
- Brown the chicken until it is cooked through, about 10 minutes. Remove the chicken from the pan and set it aside.


- Now, in the same pan, add the remaining butter and let it melt over medium heat, scraping the browned bits from the bottom of the pan with a wooden spoon or scraper.
- Add the flour to the pan and stir it into the butter. Cook for 2 minutes.


- Whisk in the chicken stock and continue to cook over medium heat until it has thickened a bit.
- Now, add the cooked chicken, cream of chicken soup and onion soup mix. Stir and cook over medium heat until bubbly.


- Remove the pan from the heat and stir in the fresh parsley.


Serve this rich, hearty chicken gravy over mashed potatoes, brown, wild or white rice, your favorite pasta, cooked stuffing or cooked egg noodles.

Here are a few substitutions for some of the ingredients so you can use what you may have on hand:
- Use your favorite boneless, skinless cut of chicken. We used thighs, but if you prefer white meat, you can use boneless skinless chicken breasts.
- We used cream of chicken soup, but cream of mushroom soup would also complement the onion soup mix. For an even creamier gravy, you can stir in a little heavy cream or add a dollop of sour cream. We use cream of chicken a lot in quick and easy dishes. (We use two cans in this old-fashioned chicken and noodles recipe.)
- This versatile easy chicken and gravy recipe can be made with turkey, pork chops or pork tenderloin cut into bite sized pieces as well.
- If you need an even quicker version, make the gravy and stir in rotisserie chicken or precooked shredded chicken.
- While we love the easy homemade gravy, you can use chicken gravy packets or even jarred chicken gravy to get this on the table even quicker.
