Why You’ll Love These Baked Pork Steaks
If you have pork steaks or pork shoulders (or blade steaks) sitting in your freezer or refrigerator, then you may have happened upon here while trying to find one of the BEST pork steak recipes you can find, for an easy dinner recipe.
Some pork recipes are grilled, some cooked in a cast iron pan with gravy drippings, some in a slow cooker, like this slow cooker bbq pulled pork, and more! But baking is by far our favorite way to have bbq pork steaks, with no marinade required!
I think you’re in the right place and that you’re going to love how easy and how delicious this pork steak recipe is.
If you also saw my slow cooker bbq pork steaks recipe, then you may already know that cooking them slowly, over a longer period of time makes the pork steak meat literally fall off of the bone.
But when you need something a bit quicker, baking pork steaks in the oven is an alternative that definitely won’t disappoint you and will also leave you with tender pork steaks.
The day that I made these to take photos for the blog, I only made two steaks, as it was just the right amount for what we needed that day…however I’ve created the recipe in the recipe card below to reflect 4 pork steaks, as that would be more common for a family of 4.
What is a Pork Steak?
Pork steaks are a section of a hog that’s cut from the shoulder, and /or butt. Some grocery stores or butcher shops have pork steaks ready for you. However, if you are not able to find them, you can ask them to cut pork shoulder or pork butt in to steaks for grilling.
What is the Difference Between Pork Chops and Pork Steaks?
Since pork steaks come from the shoulder and or butt area of a hog, the pork chops are cut from the loin section. Pork chops like these Baked Pork Chops, tend to be lean than pork steaks and can sometimes be more “dry” than pork steaks, where pork steaks tend to have more fat around the meat to help make them juicy.
Ingredients for Pork Steaks in the Oven
All you’ll need for these delicious, tender porks steaks are:
- Pork Steaks – As many as you’ll need to serve.
- Salt – This is optional, and remember that your barbeque sauce could have salt in it.
- Pepper – This is also optional, and it’s important to keep in mind how spicy the bbq sauce is that you’re using.
- BBQ Sauce – your favorite kind will do! We love using Sweet Baby Rays.
How to Cook Pork Steak
Now of course you don’t have to cook pork steaks with bbq sauce, but for us, it’s really hard to cook them/eat them any other way.
Feel free to have fun creating sauces and using different spices for your pork steaks, but if you’re wanting to bake your steaks in the oven, then this is a great reference to find out how long to cook them.
You can find the full recipe card with an ingredient list and instructions at the bottom of this post.
Start by preheating your oven to 400º and then cover your pork steaks with salt and pepper (if desired).
PRO TIP: You can even pound your pork steaks with a meat tenderizer before seasoning them if you want to make sure they’re super tender.
- Next, line a baking pan (large enough to fit the number of steaks you’re cooking, so they don’t overlap) with aluminum foil for easy cleaning, and then drizzle a layer of barbeque sauce on the aluminum foil where you’ll place each steak.
- Place your steaks down on the foil and sauce.
- Then, cover steaks with the remaining bbq sauce.
How Long Should You Cook Pork Steaks in the Oven?
- Bake the pork steaks uncovered for 50-60 minutes, (on the middle rack) or until the internal temperature of the steaks reaches 145 degrees.
NOTE: Oven temperatures can vary, and some have reported that they prefer baking at 350 for 50-60 minutes, or checking the internal temp after 30 minutes to avoid over-cooking. I’ve even used different ovens and have found myself, cooking them for shorter/longer times, so it’s best to check to see what works best for yours.
Expert Tips:
- Flexible: You can cook one pork steak up to as many as you want/need, as long as they fit in the baking pan you plan to use, and if you have enough bbq sauce to cover them.
- Meal Plan: Cook more than you need, and serve the leftovers, sliced, on bbq nachos, on a side salad to make it an entree, or as a sandwich!
Recipe FAQs
Bake pork steaks at 400° for 50-60 minutes.
Although it’s not a must, it is a great idea to allow it to rest for a few minutes before serving to all of the juices to set in before slicing.
The internal temperature of cooked pork steaks should reach at least 145°F before eating.
How to Store
Refrigerate: If you have leftover pork steaks, it’s best to allow them to cool and then place in an airtight container, in the refrigerator for 3-4 days.
Freeze: You can freeze leftover pork steaks in a freezer-safe container for up to 3-4 months.
Thaw: Thaw the pork steaks in the refrigerator overnight.
Reheat: Sometimes reheating cooked pork steaks can make them dry. So if reheating in the oven, place the pork steaks in a baking pan (with raised sides) and pour about 1/4 cup of broth in the bottom, to help add moisture to the steaks while reheating.
What Side Dishes to Serve with Pork Steaks
Side dishes that go with bbq pulled pork are often delicious with pork steaks too! For instance, we LOVE Pasta Salads, this creamy corn casserole recipe, Amish Potato Salad or this old-fashioned potato salad (or this cauliflower potato salad for low-carb eaters), and this Cornbread Salad.
Meal Planning for the Week?
Since the oven is hot, consider making burgers in the oven too, so you can eat on them all week! Just re-heat and serve! Or, making these cube steaks in the slow cooker is so easy!

I’m trying this recipe right now. I have them in the oven now temperature set at 350 degrees baking for 50 minutes because my oven tends to cook a little fast. Wish me luck.

I hope you love them Elaine!!

I havent taken them out yet but we have two ~12oz in there and at 400 I put the meat thermometer in and they were already 145 internal after only 15 minutes. So I’m not sure if I did something wrong but I’m going to leave them just a couple more minutes and then take them out.

Being from the Midwest, we have always done these on the grill with Sweet Baby Rays. We tried it your way and they are soooooo tender and amazing! My husband is hooked on them so we are having them again tonight. We did 350 degrees as that worked best with our oven. Smells so good in here right now!

I made these for dinner tonight and they were fantastic! I’m a classically trained pastry chef so asking me to make a cake that looks like a Great Dane is no big deal but I’m always nervous about cooking meat in the oven. LOL I had two 6 oz steaks and cooked them for 50 minutes at 400 and they were perfect. I only had a little Sweet Baby Rays left in the bottle but it was plenty to give that BBQ flavor. I’ll definitely make these again. Thank you!
Jessica says
Awwww, haha!!! Yay! I’m so glad that you liked them! Thank you for taking the time to let us know.

Linda Munns says
50 minutes at 400 degrees produced dry, tough pork steaks and I had large ones! I love the idea and the flavor was good, but I’m going to try 375 degrees for 45 minutes next time. Thank you.
Jessica says
Thank you for letting me know Linda! I’ve made a note in the recipe in case anyone else has this problem! I do know that some ovens cook faster than others, so I want to make sure they keep their eyes out for this too. I’m going to make it again at my mom’s house to see if her oven does the same and update it on my end if need be! Thank you again, so sorry you had this trouble!
Linda Munns says
Jessica ~it’s such a great, easy, yummy recipe, I’m not giving up!! Thank you!
jennifer says
do not drain all of the juice off while it’s baking. if you do then those that have no juice to cook in will in fact dry up and become hard. only drain them at the halfway point as well. if you’re trimming fat before baking don’t. the fat will make them tender. i hope this helps!
Rashawn says
That’s still way too long. 400 degrees for 20-22 minutes is perfect. Anything longer than 25 minutes and they’re dried out.
Max says
I am getting ready to make this, but I just wanted to know if it will work with Pork Top Loin Chops Bonless?
Thanks
Jessica says
Hi Max! I don’t see why it wouldn’t work for those! If they’re smaller than a pork steak, you may want to watch the cooking time. I hope that helps!
Amy says
