Simple Baked Feta Pasta Recipe

Ingredients for Feta Pasta
- olive oil – plus more
- freshly squeezed lemon juice – optional
- clove of garlic – minced
- dried oregano
- cumin
- cherry tomatoes
- block of feta cheese
- fresh rosemary
- dried pasta (we use the rotini pasta like we used in this rotini pasta bake.)
- Salt – to taste
- Freshly ground black pepper – to taste
Variations

How to Make Baked Feta Pasta
First, you’ll preheat the oven to 400F.
In a small bowl, add the olive oil, lemon juice (if using), minced garlic, dried oregano, and cumin. Mix until combined. Set aside.
Place the cherry tomatoes into a medium baking dish, then add the olive mixture and toss. Place the feta cheese in the middle of the baking dish and flip it to coat it in oil. Top with fresh rosemary.


Bake for 30-35 minutes or until the tomatoes have burst.
Meanwhile, cook the pasta in salted water according to the package instructions (cook until al dente). Drain and toss with ½ tablespoon of olive oil to keep it from sticking and drying out.

Once the tomatoes have burst, remove the baking dish from the oven and turn off the oven. Use a fork to mash the feta and tomatoes into a creamy sauce.

Toss in the pasta. Season with salt and pepper, taste and adjust seasonings if desired (salt may not be necessary depending on how salty your feta is).


Serve immediately!
